This great muffin/loaf recipe, courtesy of my neighbour, Mary Ann, has lots of options! Makes 2 loaves, or up to 24 muffins.

The first time I made them I used STRAWBERRIES!

Ingredients

For 2 Dozen(s)

Wet Ingredients

  • 3 eggs
  • 1½ cup(s) granulated sugar
  • 1 cup(s) vegetable oil
  • 3 teaspoon(s) vanilla

Dry Ingredients

  • 3 cup(s) all-purpose flour
  • 1 teaspoon(s) baking powder
  • 2 teaspoon(s) cinnamon
  • 1 teaspoon(s) salt
  • 1 teaspoon(s) baking soda

Filler

  • 2 cup(s) grated, drained zucchini, OR
  • 2 cup(s) grated carrots,OR
  • 3 mashed bananas, OR
  • 2 cup(s) canned pumpkin

Fruit

  • 1½ cup(s) blueberries, OR
  • 1½ cup(s) soaked raisins, OR
  • 1½ cup(s) chopped apple, OR
  • 1½ cup(s) chopped pear

Fruit Surprise Muffins or Loaves Directions

In a large bowl, combine wet ingredients: eggs, sugar, vegetable oil and vanilla. Mix in your "filler" choice.

In another bowl, combine dry ingredients: flour, baking powder, cinnamon, salt and baking soda. Gradually add it to the wet mixture.

Fold in your fruit choice.

Muffins - spray muffin tins or use paper liners. 

Loaf pans - spray pans.

Bake at 325°F for 30 minutes.
