  • 1 heaping cup(s) cooked, shredded roast beef
  • 1/4 cup(s) green pepper, diced
  • 1 green onion, diced
  • 8 cup(s) water, divided
  • 1 cup(s) total of diced celery and carrots
  • 1 potato, peeled and diced
  • up to 3 1/2 tablespoon(s) beef bouillon concentrate
  • 1/2 cup(s) chopped fresh cilantro
  • 4 chopped fresh basil leaves
  • 3/4 cup(s) extra large egg noodles

Hearty Vegetable Beef Soup Directions

Bring roast beef, green pepper, onion and 1 cup water to a boil in a 3 quart pot. Simmer for 5 minutes.

Add mixed vegetables, diced potato and 4 cups water to pot, and bring to a boil. Reduce heat and simmer, uncovered, until vegetables are cooked, about 30 to 40 minutes.

Replenish water and boost flavour - add up to 3 cups of water, up to 3 1/2 tablespoons beef bouillon concentrate, cilantro and basil. Bring to a boil. Add egg noodles and simmer until the noodles are cooked, about 12 minutes. Serve.
