Mix together dates, brown sugar and eggs in a large frypan. Cook on medium-high heat until mixture is heated, then reduce heat to medium setting. Total cook time is 10 minutes. Remove from heat. Stir in vanilla.
Mix together walnuts, Rice Krispies, cherries and salt. Add to frypan and mix well.
Place coconut in a small bowl. Make a runny paste of icing sugar and a small amount of water. Using a spoon, make golfball-size cookies. Dip in paste until fully covered, and then roll in coconut. Place on lined cookie sheet.
Refrigerate for 1 hour. Remove from cookie sheet and store in airtight container.
