  • 1 lemon cake mix
  • 1 package lemon instant pudding
  • 4 eggs
  • 1 cup(s) water
  • 1/2 cup(s) vegetable oil
  • 2 tablespoon(s) melted butter
  • 1/2 cup(s) granulated sugar
  • 2 tablespoon(s) fresh-squeezed lemon juice

Lemon Loaf Directions

Combine cake mix, instant pudding, eggs, water and oil. Beat steadily on medium speed until batter is free of lumps, about 2 minutes.  

Pour batter evenly into two waxpaper-lined loaf pans. Bake in 350°F oven for 45 minutes, then drizzle a mixture of butter, granulated sugar and lemon juice over the loaves. Continue to bake them for 15 minutes.  

Remove from oven and cool on baking racks for 15 minutes.  

Grip the waxpaper and lift the loaves out of the pans. Strip the waxpaper off. Finish cooling the loaves.  

To store, wrap them in waxpaper and then cover with foil.  Refrigerate.
