Pick up a cooked chicken tonight and make these quesadillas for dinner! Turkey works just as well! Make them GLUTEN FREE with CORN tortillas, but check the label first, as not all corn tortillas are free of gluten.
For 4 Serving(s)
Separate the tortillas.
On each tortilla, spread 1 tbsp. mayo.
Cover one half of each tortilla with: ½ cup chopped chicken, ½ cup chopped tomatoes, 1½ tbsp. bacon bits and ½ cup cheddar.
Fold the ingredient-free side of the tortilla over the ingredients, forming a halfmoon.
Bake on cookie sheet (2 or 3) at a time, in 350°F oven for 8 minutes.
Remove from oven, transfer to a dinner plate and cut into quarters with pizza slicer.
If desired, serve with tomato salsa and sour cream.
