Pop this stew in the crockpot on Saturday and then do your errands. It will be ready to serve for dinner or a hearty lunch.

Place pork in crockpot. Toss with flour to coat the meat.
Add carrots, potatoes, onions, and garlic to crock pot. Toss together pepper, thyme and salt. Add to crock pot and mix well.
In a medium bowl, combine vegetable juice, brown sugar and mustard. Pour over meat and vegetables.
Cover with lid. Cook on Low setting for 6 hours, or on High setting for 4 hours. Serve with fresh bread.
