Prepare this dish tonight and bake it tomorrow morning. Try substituting apples for the pears. I add 1/2 cup of cranberries for colour and a flavour enhancement. Add them to your pear/apple mixture.

Peel, core and cut pears into 1/4-inch slices; set aside.
In large frypan, melt butter on medium heat setting. Add brown sugar and corn syrup. Cook, stirring until sugar is disolved, about 1 minute. Add pears. Cook on medium-high heat setting, stirring often, for 5 minutes.
Whisk flour with 2 tablespoons water. Stir into pan and cook until pears are tender and sauce is thickened, about 10 minutes. Fold into greased 9x13-inch baking dish. Let cool for 20 minutes.
Layer bread over pears, overlapping them slightly. Whisk together milk, cream, eggs, vanilla, nutmeg and salt, and pour over bread. Cover and refrigerate for at least 1 hour, or overnight.
Mix together sugar and cinnamon, and sprinkle over bread mixture.
Bake, uncovered, in 350°F oven for 50 minutes, until the top is golden brown and puffy. Let it sit for 10 minutes. Slice and serve.
ALTERNATE RECIPE - Substitute pears with 4 Granny Smith apples. Increase cooking time in (3) from 10 to 12 minutes.
