This is a drop cookie shortbread. No rolling. It's my favourite shortbread recipe!

In a mixing bowl, beat butter and icing sugar with hand mixer for 15 minutes.
Add remaining ingredients.
Preheat oven to 275°F. Using a tablespoon, spoon batter onto baking sheet (20 to 24 cookies should fit onto baking sheet). Bake on second rack from bottom of oven for 23 minutes.
Cool on wire rack. Transfer to airtight container. Placing wax paper between layers will help prevent breakage.
Store in a cold room or refrigerator.
