These tasty no-bake "cookies" are a great weekend project for the kids or grandkids!  To harden them, refrigeration is suggested, but they can be eaten right away!

Recipe

  • 1/2 cup(s) peanut butter
  • 2 tablespoon(s) butter, softened
  • 2 cup(s) icing sugar, divided
  • 1+ cup(s) shredded, sweetened coconut
  • 2 cup(s) bran flakes

Peanut Butter Balls Directions

In a medium-size bowl, mix the peanut butter and butter. Add 1 cup icing sugar and mix well.

Add the Bran Flakes, and mix well.

In a small bowl, make a thin paste with 1 cup of icing sugar and water. (The paste should drip off your spoon). Measure 1 cup of coconut into a separate bowl. 

Scoop out a heaping tablespoonful of the Bran Flakes mixture, and roll it into a ball. Coat it with the icing sugar paste and then roll it in the coconut. Place it on a baking sheet. Contine in this manner until all the Bran Flakes mixture is rolled and coated.

MAKE ADDITIONAL PASTE AND REPLENISH THE COCONUT AS NECESSARY.

Refrigerate at least 2 hours and then place in an airtight container. Store in cold room or refrigerator.
