The rub and sauce take a bit of time but they're worth it!
For 8 Serving(s)
RUB - Combine chili powder, cumin, dry mustard, cinnamon and salt.
SAUCE - Combine oil, onion, garlic, paprika, dry mustard and salt. Heat in medium-size frypan for 3 minutes. Add Ketchup, brown sugar, vinegar, and water. Bring to a boil and then simmer for 20 minutes, until it reduces slightly and thickens.
PRECOOK RIBS - Rinse ribs and cut into 3 or 4 rib portions. Place in a large pot and add enough water to almost cover them. Sprinkle with salt. Bring them to a boil and then let simmer for about 45-55 minutes. Carefully remove from the pot and place on large platter.
Apply rub to both sides of ribs.
BARBECUING - Heat BBQ to 350-375°F. Lightly grease the grates, and place ribs on them. Apply the barbecue sauce, and cook for about 8 to 10 minutes. Flip them, apply barbecue sauce and cook for an additional 8 to 10 minutes. Remove rib portion from grill and check internal temperature. The meat is done if the temperature is at least 160°F
When fully cooked, remove from grill and place on a (clean) platter. Serve.
