Recipe

  • 4 lbs. boneless chicken breasts
  • OR 4 lbs. pork tenderloin
  • 1/2 cup(s) olive oil
  • 1/4 cup(s) lemon juice
  • 4 teaspoon(s) dried oregano
  • 1/4 teaspoon(s) salt
  • dash pepper (if desired)
  • 3 cloves garlic, minced

Chicken or Pork Souvlaki Directions

Cut chicken or pork into 2 inch cubes, and place in glass mixing bowl or sealable plastic bag. If desired, split out servings of chicken for guests who do not want chicken marinated.

In a 2 cup measuring cup, mix olive oil, lemon juice, oregano, salt, pepper and garlic. Whisk, or blend the marinade with a electric hand-held blender.

Add the marinade to the meat (except portions not to be marinated). Season unmarinated chicken with salt and pepper. Cover or seal, and IF possible, refrigerate all chicken for at least 8 hours or overnight.

Place meat on steel skewers. Discard marinade.  

BARBECUE meat at about 300°F until fully cooked, about 20 minutes. Check skewered meat by slicing with sharp knife. Meat is done if juices are clear and meat is no longer pink. Avoid browning the meat as this will dry it out.

Remove from barbecue. Tent skewered meat with foil for 5 minutes. Remove meat from skewers and place it on a serving plate.

To OVEN roast, place chicken on skewers. Place skewers on foil on baking sheet and fold foil to cover. If also cooking unmarinated chicken, do the same with it, and place on baking sheet.

Cook in 350°F oven for 30 minutes.

Remove from skewers. Serve with Tzatziki sauce.
