These roasted potatoes work well with any meat dish.
For 8 Person(s)
Lightly grease a 9x11 baking dish.
Peel potatoes and cut them into 2 inch pieces (or quarter them). Transfer them to the baking dish.
Cut pepper into 1x2 inch slices and add it to dish. Quarter the onion and add it to the dish.
Pour the vegetable oil over the potatoes, followed by the oregano, lemon pepper and salt. Toss the potatoes to coat.
Bake in 400°F oven for 55 minutes or until potatoes are tender.
NOTE - for a more colourful dish, use a combination of red, orange, yellow and/or green peppers to make up the required amount.
