A great breakfast or coffee break muffin.
For 1 Dozen(s)
Combine sugar, eggs and oil.
Combine flour, baking powder, baking soda, cinnamon and salt.
Add dry ingredients to the oil mixture just to moisten-do not overmix.
Add carrots, pineapple and vanilla. Mixture will be very thick.
Fill paper-lined or greased muffin tins to the top. Bake in 375°F oven for 20 to 22 minutes.
