  • 1 onion
  • 1/2 cup(s) diced red pepper
  • 1/2 cup(s) diced green pepper
  • 2 cup(s) chopped cooked ham
  • 3 cup(s) grated cheddar cheese
  • 8-10 flour tortillas
  • 4 eggs
  • 2 cup(s) milk
  • 1 teaspoon(s) flour

Breakfast Burrito Casserole Directions

Saute onion, green and red pepper, and cooked ham. Fold the sauté mix into 2 cups grated cheddar cheese.

Spoon in equal portions onto flour tortillas, and roll tortillas up. Place each roll (seam side down) into a greased 9x13 pan. 

Blend eggs, milk and flour and pour over tortillas. Top with the remaining cheddar.

Refrigerate overnight.

Bake at 350°F for 45 minutes.
