  • 3 eggs
  • ¼ cup(s) vegetable oil
  • ½ cup(s) maple syrup
  • 1 teaspoon(s) vanilla
  • 1 cup(s) grated zucchini
  • 1 cup(s) grated carrots
  • 2 cup(s) ground almonds
  • 1 cup(s) rolled oats
  • 2 teaspoon(s) ground cinnamon
  • ¼ teaspoon(s) ground nutmeg
  • 1 teaspoon(s) baking soda
  • ½ teaspoon(s) fine sea salt
  • ½ cup(s) chopped walnuts
  • ½ cup(s) raisins, dates, or chocolate chips

Gluten Free Granola Muffins Directions

In a large bowl, mix together eggs, oil, maple syrup and vanilla. Mix in zucchini and carrots.

In a second bowl, mix together ground almonds, rolled oats, cinnamon, nutmeg, baking soda, sea salt, walnuts and raisins.

Add dry mixture to wet mixture and blend well.

Spoon into paper-lined or greased muffin tins (see note below). Cook in 350°F oven for 25 to 35 minutes. Insert a toothpick into centre of a muffin. If it's dry when removed, the muffins are cooked. 

Recipe notes

This muffin does not rise. The final height of your muffin will be the amount of batter placed in muffin tins.
