  • 3 cup(s) white vinegar
  • 2 cup(s) water
  • 3 cloves garlic, peeled and mashed
  • 1lb hot peppers
  • 3 teaspoon(s) pickling salt

Pickled Hot Peppers Directions

Measure vinegar and water into a medium saucepan. Add garlic and heat to boiling. Remove garlic.

Clean peppers, cut off stems and slice peppers into half inch rings (including the seeds and pulp). Pack into sterilized jars. Add pickling salt - ½ teaspoon for 250ml/8oz. jar OR 1 teaspoon for 500ml/16oz. jar. 

While vinegar is still hot, fill jars with liquid, leaving a ¼" head space. Seal fairly tightly with sterilized lid.

Place jars in hot water bath, covering them with water. Boil for 10 minutes. Remove from bath and let stand for 24 hours. Any jars that do not seal will need to be refrigerated.
