The box version is tasty enough but this "from scratch" version is much better!

Sift flour in a large bowl. Add baking powder, salt and sugar, and toss thoroughly through the flour.
In a medium bowl, beat the egg, then add the melted butter and vanilla. Add milk. Whisk lightly.
Make a well in the center of the flour mixture and add the milk mixture. Whisk until smooth.
Heat frypan on medium high heat setting and add a teaspoon of oil (add more oil as needed for each pancake). Add about 1/2 cup batter to pan, spreading it slightly. Cover. Cook each side until golden. The pancake is cooked if the centre springs up when pressed.Serve with warm maple syrup.
