Ingredients

Chickens

  • 2 - 3 to 4 lb. whole chickens

Rub

  • 1½ teaspoon(s) salt
  • 1 teaspoon(s) paprika
  • 1 teaspoon(s) onion powder
  • 1 teaspoon(s) dried thyme
  • ½ teaspoon(s) pepper
  • ½ teaspoon(s) garlic powder
  • ¼ teaspoon(s) cayenne pepper

Slow-Roasted Chicken Directions

Day 1 Rub Day - Rinse and pat the chickens dry. Mix together the rub ingredients, and thoroughly rub the mixture on the chickens. Place each chicken in a resealable plastic bag and refrigerate for 24 hours or so.

Day 2 Roasting Day - Place the chickens in a large roasting pan with 1 cup of water. Cook, uncovered, in 250°F oven for 4 hours or until their internal temperature reaches 175°F. As they roast, baste them 2-3 times with the drippings. 

Remove the skin. These chickens will provide enough meat for several meals.
