These muffins are a bit of a fuss to make, but the time is definitely worth it. Enjoyment guaranteed! Makes 18.

Wash orange. Cut into pieces and remove seeds. Place in blender and blend until rind is finely ground.
Add juice, dates, egg and butter, and pulse in blender.
Mix all remaining ingredients in a medium bowl. Pour orange mixture into flour mixture and stir sparingly.
Using two tablespoons, fill 18 paper or butter-lined muffin tins with batter. Bake at 400°F for about 15 minutes.
