Serve this cheesey delight with baguette crackers!

Preheat oven to 375°F. Cover a cookie sheet with foil or parchment paper.
Mix together tomatoes, garlic, olive oil and salt in a medium bowl. Spread on cookie sheet, and cook in oven for about 12 minutes, or until the skins of the tomato start to blister.
Transfer tomatoes to an ovenproof serving dish. Cut mozzarella into 1/2-inch cubes and place on top of tomatoes, followed by parmesan cheese. Tear basil leaves into strips and spread them on top.
Cook in oven for 20 minutes or until cheese is golden and bubbling.
Serve with your favourite crackers.
