  • 2 cup(s) uncooked parboiled white rice
  • 3 cup(s) water
  • 2 lbs. boneless chicken
  • 1 tablespoon(s) oil
  • 2 medium red and green peppers, cut into strips
  • 2 tablespoon(s) corn starch
  • 1/2 cup(s) soy sauce
  • 1/4 cup(s) and 2 tablespoon(s) brown sugar
  • 1 teaspoon(s) ground ginger
  • 1 teaspoon(s) garlic powder
  • 1 - 398ml/14oz. tin pineapple chunks in juice
  • 1/4 cup(s) and 2 tablespoon(s) white vinegar

Sweet And Sour Chicken With Rice Directions

Place rice and water in a medium-size pot, cover and bring to a boil. Turn off heat and leave pot on cook on stove element. Do not lift lid. Let sit for 30 minutes.

Cut chicken into 1 1/2-inch cubes. In medium frypan, cook chicken in oil on medium heat. When well browned, add peppers and cook for 2 minutes.

Mix together cornstarch and soy sauce. Mix together sugar, ginger and garlic powder. Add both mixtures to the frypan with pineapple, including juice, and vinegar. Cook until the mixture reaches a full boil.

Serve with hot cooked rice.
